What does a whole, half, or quarter mean?

You're reserving a share of one of our grass-fed beef cattle before it goes to the butcher. A quarter is a quarter of the animal, a half is half, and a whole is the whole beef — all cut and wrapped the way you choose.

How much freezer space will I need?

Roughly 3–4 cubic feet for a quarter, 6–9 for a half, and 12–18 for a whole. Every animal is a little different, so Gail can tell you what to expect for yours.

How do I pay?

Most folks pay Gail by Venmo. A deposit holds your share, and Gail goes over the rest of the payment with you before pickup.

Can I choose my cuts?

Yes — every share is custom-cut. Before butcher day, Gail sends you the processing instructions so you can choose your steaks, roasts, ground beef, and how it's wrapped.

What makes Red Heart beef different?

Our cattle are born on the ranch, raised on rotationally grazed pasture, and 100% grass-fed and grass-finished. American Aberdeen is the backbone of the herd, with Wagyu (Tajima) and Akaushi genetics joining in.

When will my beef be ready?

Gail texts you as soon as it's ready to pick up after the butcher date.
